I am wondering if upgrading PT to foundation 6 is a simple task or is it something that is to complex for me to tackle on my own?
Would you be able to provide some input on each file that I would need to change/upgrade to help me along the way or is this something beyond the scope of support?

It should actually be relatively straight forward to convert as other than the nav-bar and breadcrumbs classes of Foundation 5 (there are equivalents in version 6) it is just the grid that is used;

You'll see the various grid classes e.g. 'row' and 'small-12 columns' throughout the /html/ files - these would need to be converted to the version 6 grid equivalents which are documented here;
