I am considering about moving the "backend" to a dedicated server. I am currently hosting my web server and database backend on the same machine. What files and folders are necessary to import the feeds so then I can configure the database credentials in the config.php for this remote database?

You should only need on the database server:
config.php
config.advanced.php
includes/*
scripts/*
admin/*
feeds/
I would also create index.html and index.php blanks in the top level directory and ideally HTTP password protect the installation.
On the front end server;
- Merchant logos will need to be uploaded manually
