I would like to use a Unique Product Description and Image (that I define) for each product and then use the affiliate feed just to pull all other details that then populate in the list below each product.
Any ideas how I can go about this - as at the moment it pulls in the cheapest options details. I know I could have the same product description for every product from each merchant but that doesn't feel like the most efficient way of working.

This is built in to the Product Mapping functionality - all you need to do is create a Product Mapping entry with the name exactly matching an existing product name that you wish to provide a unique description for, and then enter your custom description on the configuration page for the mapping. The Alternatives box can be left empty if mappings are not required.
The custom description will be applied at next import.
