Hello David,
as sitemap.php is linking to all product pages derived from each feed, I just want to be sure, that in niche mode only pages are taken from the feed for sitemap, that are relevant and matching to a product mapping?(I didn't try yet, just want to know before I upload my site to the server).

That's correct - sitemap.php will only map products that have actually been imported.
