If I look for some product as a printer in french (imprimante), then I get paper for printers in first position and get a printer only in the second page.

I've tried to desactivate "fulltext" on the beta site, and with a 'like%' I get more relevant results :

It seems better that way.
My question is : Do you think fulltext is better, and would it be possible to use fulltext but get the printers in first positions ?

Regarding Amazon API results, make sure that you are using the most appropriate SearchIndex for your site. The list can be found here, and you can change the index used on line 128 of amazon.php (replace Blended with your preferred SearchIndex value)...

I see you have quite a large site, but also including description in search ($config_searchDescription = true; in config.advanced.php), so that is where I think the reduced relevancy is coming in - with such a large site I would suggest disabling search in description and re-import all.
There may be more optimisation required, in which case let me know - as "printers" is really a category search rather than a product search, but we can look at that if there's still a relevancy issue on your site...
