I'm probably missing something obvious here as I am new to this - tell me where to look if it is in the documentation - but can I add a "review this item" and a list of accepted reviews to every product page (i.e. add reviews to pages like this page)

Is $config_useInteraction set to TRUE in your config.php? That should enable the reviews feature...
