I just moved my site to a new server by re-installing from scratch. Strange thing is, that searches are now case sensitive.
What would be causing this, and how can I get around it?

Bear with me on this, but I think it implies that MySQL is configured to use a binary collation rather than a language (text) collation as the default collation for TEXT field types in the database.
Could you please email me a link to your site so that I can take a look to see how it behaves, and then I'll try to work out what configuration settings need to be adjusted to restore the default behavior.
